[dropcap]H[/dropcap]enknjvü (meaning green leaves curry) is of the main dish of the Rengmas and can be found in every house hold. It’s is a vegetarian dish and is very good for all those who are health conscious. There are different types of yam that are available in the market. Some of them are those that are round/oval and long in shape. The best is to use the long Yam for Henknjvü as it is soft, slippery and also has lots of fiber.
Ingredient: -
1. 2-3 Long Yam,
2. Fragmented Bamboo shoot, fragmented mustard leaves, Hentserü (Hibiscus sabdariffa, or rosella hibiscus) any one of the following can be used
3. All/any green leaves or Squash
4. Salt to taste
Preparation time 20-30 minutes.
Preparation method
a. In a pot pour in half a liter of water or more
b. Clean and boil the yam for 15-20 minutes or until the yam is soft (whichever is earlier)
c. Once soft put in Fragmented Bamboo shoot/ fragmented mustard leaves/ Hentserü any one of the following or according to one’s preference; cook it for 2 -3 minutes
d. Chopped or tear the green leaves and cook for 10 minutes or till the green vegetables is cooked
e. Once all ingredient are cooked together mash the yam and mixed it properly
f. Lastly add salt according to one’s own preference. (Taste better with less salt)
Note: - The curry should not be made thick but it should be a bit runny.
