
DIMAPUR — A 10-day workshop on 'Basic culinary practices and food preservation', sponsored by the Government of Nagaland in collaboration with the State Institute of Hotel Management and Nagaland Tool Room and Training Centre, was held at the North East Christian University (NECU), Burma Camp, Dimapur from Feb. 12 to 22nd.
Eighteen participants including housewives, hostel/PG proprietors and catering groups participated in the workshop, an update stated.
The participants were given training on the basics of food preparation using various ingredients and also various food preservation methods.
Resource persons of the sessions were Ajano Tungoe, senior dietitian at Putonuo Hospital; Vinikali K Yepthomi, AC, NRLM and faculties of State Institute of Hotel Management and Nagaland Tool Room and Training Centre.
Apart from experimental cookery, nutritional assessment was also conducted followed by a visit to food establishment Manna Oven, Seitekhema A.
At the end, the participants shared their experiences and how they will be using the knowledge that they have gained for future endeavours.
